Del Suelo Mezcal
Del Suelo, meaning ‘of the earth' is an artesanal mezcal, and like the name, it carries with it a story of the soil and the agave from which it is made. In our expressions we celebrate the state of Oaxaca and a range of farmed and wild agave.

Del Suelo - From the Earth
Distilled miles from anywhere, rural and unspoilt and only accessible by a dirt road is the village of San Luis del Río. The palenque (distillery) is nestled in a sun-kissed valley in the remote mountains of Oaxaca. The unique micro climate and mineral-rich soil impart distinct flavours to the wild and cultivated agave that grow there. Combined with local expertise, it yields mezcal of unparalleled quality and a rich, complex character.
From the Earth into the Fire
Mezcal is perhaps the hardest of all spirits to make. The cultivated and wild agave grow on steep hillsides, often distant and remote. Each agave reaches maturity in its own time and it is up to our Mezcalero to recognise the signs that it is ready to be harvested. Once harvested, it’s roasted in earth ovens, crushed by the stone Molino wheel, wild fermented in open air vats and distilled to proof.
